Slimming world spag bol

Been a busy few days... as you can tell this is half term week as it's gone all quiet! Well I literally was silent as I had no voice for a few days and felling rubbish and looking after a child during the holidays don't mix well I can tell you x
I am starting to feel sub human now but throat still sore and coughing my lungs up as well as seeing my blue inhaler again to keep me breathing!!!!
The weather has been turning cold so We have been onto the spaghetti bolognese as it is an easy warming comfort meal.
Spaghetti bolognese
Serves 3 or more... depends on appetite
  • mince 500g (quorn or 5% fat)
  • pasta 220g for 3 of us
  • carrots 2 chopped with onion
  • 1 onion chopped (I use the small chopper to hide them ;)
  • 1 pepper red chopped
  • 1 tbsp oregano or italian herb seasoning
  • 1 tbsp tomato puree
  • 500g of passata or 1 tin of chopped tomatoes
  • frylight/spray oil
  • garlic cloves 2 minced/crushed
  • some people like to add Worcester sauce (1 tbsp) 
To make we fry off the onions and carrots with a little water to help soften quickly. I add the tomato puree and garlic and cook them out with a tiny bit of water if it sticks. I add the oregano or italian seasoning. Once cooked out then add the mince to brown off. Add the passata, worcester sauce and peppers or mushrooms or any other speed veg you want to add at this point. The bolognese should be simmering so cook the pasta at this point and once the pasta has cooked the bolognese will hopefully have thickened. We add parmesan or Healthy extra cheese.
Freezes well so make as huge batch as you like!
This is a favourite in our house put with spaghetti or pasta and can be used in SW lasagna or in roasted peppers. Very versatile!

Yummy macaroni cheese

Comfort food is a must in this weather and I'm already craving it in abundance. I love bolognese and chilli con carne and my little person does too. Slimming world why am I doing this now?

OK starting the Slimming world journey again.... I am finding Slimming world a bit more challenging with a child. Anyone else out there feeling the same? I got to target and stayed at target at 9 stone, after a 3 and a half stone weight loss until I had my son. I was over the moon but once he was born I then struggled balancing cooking from scratch and feeding him and trying to have a reasonably tidy house. Something had to give and being an emotional eater I caved into eating whatever was to hand especially as breast/express feeding I was so hungry all of the time. I had no idea if I had healthy extras or not. To be honest I had no idea which way was up and who I was let along healthy extras and whether I had added the correct speed veg or not. I was lucky to be fed by mum and dad and my hubby, I was very grateful to them too for this. 3 years on and I won a 12 week countdown back to my local Slimming world group plus a diary and felt this was a huge sign that I should get back on it...

Tricky days....

Some days are more tricky than others.... We try to keep to plan but things like weddings and birthdays, holidays and other events get in the way. However I am not beating myself up over it as it is one time, and lets face it unless you know millions of people you will not be going every single day! I know that you will get told to make good choices and what things could you go for? I have tried that but this plan has to be realistic to you. I try to stay to plan as much as poss then I see dessert or I see that one item I love to eat and that's that but I believe if you tell that little voice in your head its ok Im going to have that but try to bulk up on salad and fruit then go for it. I then feel less stressed by the whole experience. I have a little holiday break coming up and I'm looking forward to not cooking and enjoying myself! Yes i want to be at target and that wont change. Once I'm back from holiday I'll get back onto plan and no probs. I'm not a consul...
