Slimming world spag bol

Been a busy few days... as you can tell this is half term week as it's gone all quiet! Well I literally was silent as I had no voice for a few days and felling rubbish and looking after a child during the holidays don't mix well I can tell you x
I am starting to feel sub human now but throat still sore and coughing my lungs up as well as seeing my blue inhaler again to keep me breathing!!!!
The weather has been turning cold so We have been onto the spaghetti bolognese as it is an easy warming comfort meal.
Spaghetti bolognese
Serves 3 or more... depends on appetite
  • mince 500g (quorn or 5% fat)
  • pasta 220g for 3 of us
  • carrots 2 chopped with onion
  • 1 onion chopped (I use the small chopper to hide them ;)
  • 1 pepper red chopped
  • 1 tbsp oregano or italian herb seasoning
  • 1 tbsp tomato puree
  • 500g of passata or 1 tin of chopped tomatoes
  • frylight/spray oil
  • garlic cloves 2 minced/crushed
  • some people like to add Worcester sauce (1 tbsp) 
To make we fry off the onions and carrots with a little water to help soften quickly. I add the tomato puree and garlic and cook them out with a tiny bit of water if it sticks. I add the oregano or italian seasoning. Once cooked out then add the mince to brown off. Add the passata, worcester sauce and peppers or mushrooms or any other speed veg you want to add at this point. The bolognese should be simmering so cook the pasta at this point and once the pasta has cooked the bolognese will hopefully have thickened. We add parmesan or Healthy extra cheese.
Freezes well so make as huge batch as you like!
This is a favourite in our house put with spaghetti or pasta and can be used in SW lasagna or in roasted peppers. Very versatile!
