Yummy macaroni cheese

Comfort food is a must in this weather and I'm already craving it in abundance.
I love bolognese and chilli con carne and my little person does too. He's not so keen on roasts which I have no idea why that is?!? Our favourite is a good roast with dry roasted potatoes and veg. Both my husband and me love macaroni cheese, I see this as part of my childhood as I used to only get macaroni cheese when my dad went off on work conferences/training around the country. He can't stand cheese (I know strange right?)
So here is a yummy macaroni cheese dish, no quark used and lots of veg, its not overly cheesy as I was used to but it satisfys the craving...
SERVES 4 Syns 3 syns per person but could add 220g philly and it count as one of your HEA
  • tub of lightest philly
  • 40g lighter cheese, grated
  • 350g macaroni pasta 
  • tomatoes cut in half (as many as you like)
  • cooked carrots, peppers, chopped cooked leeks, cooked broccoli, any speed veg you like
  • a bit of mustard powder (half tspn)
  • seasoning

Cook pasta and if need to cook veg do so (peppers are not needed to be cooked as they cook a bit in the oven/grill
Before draining the pasta take some of the pasta water a ladle at a time and whisk into the Philadelphia in a bowl to make the cheese become a creamy sauce (not too watery as the pasta will still have some water in it).
add the mustard powder or even use wholegrain mustard which is lovely but add syns if you do. 1.5syns +1tbsp
Then mix the veg and pasta together into a baking dish and add the cheese mustard sauce, use the cut tomatoes to decorate the top with cut side up.
Sprinkle the cheese over the top evenly and either grill or in the oven around 180 until the cheese has melted.

Slimming world why am I doing this now?

OK starting the Slimming world journey again.... I am finding Slimming world a bit more challenging with a child. Anyone else out there feeling the same? I got to target and stayed at target at 9 stone, after a 3 and a half stone weight loss until I had my son. I was over the moon but once he was born I then struggled balancing cooking from scratch and feeding him and trying to have a reasonably tidy house. Something had to give and being an emotional eater I caved into eating whatever was to hand especially as breast/express feeding I was so hungry all of the time. I had no idea if I had healthy extras or not. To be honest I had no idea which way was up and who I was let along healthy extras and whether I had added the correct speed veg or not. I was lucky to be fed by mum and dad and my hubby, I was very grateful to them too for this. 3 years on and I won a 12 week countdown back to my local Slimming world group plus a diary and felt this was a huge sign that I should get back on it...

Beginnings....

 OK this is me! I weighed 3 stone more in this first picture than I do now and as you can see I'm not a happy soul. I HATED having any photos taken and yet as a child I would photo bomb before people even knew what that meant! I love breads and sweet desserts I love food and trying new things and I loved going out to eat. Anyone who knows me will know that I cannot make decisions on food and so I will place hands for others to help me choose! I could honestly work my way through a menu. I loved vegetables and thought I was eating healthily but look at me, I wasn't healthy I had asthma problems and back problems.  I also initially got told I could not conceive if I was overweight by the doctor that was investigating me not being able to become pregnant. I was devastated, but then thought hang on bigger ladies get pregnant right? I will show this doctor that's not the problem and prove her wrong!!!!
